Pumpkin Rice
Ingredients
- 1 Medium Red Onion (chopped)
- 4 Garlic Cloves (minced)
- 1 Ginger, (peeled and grated)
- 3 Sprigs of Thyme
- 2 Tablespoons of All Purpose Seasoning
- 1 Tablespoon of Paprika
- 1/4 teaspoon of allspice
- 1/4 teaspoon Salt
- 1 tablespoon of black pepper
- 1/2 Pumpkin (diced)
- 1 cup of Coconut milk
- 1 cup of vegetable broth or water
- 1 whole Scotch Bonnet
- 2-3 cups of long grain or basmati rice
Instructions
- Heat oil in a pan and cook, onions, garlic and ginger until soft
- Season with all purpose, salt, black, pepper, paprika, all spice
- Add diced pumpkin with 200ml of water
- Add coconut milk, vegetable broth, thyme and whole scotch bonnet
- bring to the boil, once boiled reduce to low heat and simmer for 7-10 mins
- Rinse rice and add to the pot
- cook on medium-low heat for 15 mins or until rice is cooked
- stir well
- remove scotch bonnet and serve
n.b – goes very well with curry chicken
